What did you use to reduce the sink hole opening like Jed mentions ?

What did you do for the city water line? On the OE faucet there are two fittings, one for the water tank hose (clear flex vinyl) and one for the city water line (grey pex). It's obvious the included brass barb is for the tank hose. I'm guessing the euro models didn't have a city water hookup? I never connect to city water anyway so I'm thinking some type of threaded plug to cap the pex line? Maybe a 3 way fitting with a check valve on the city side like Gowesty includes with their Shurflo kit? Any other ideas?
2. What did you use to reduce the sink hole opening like Jed mentions in the video? I'm thinking some type of SS escutcheon? Just have to scout the local big box hardware store for the right size I guess? Or make one out of SS sheet?

Any other tips for those that have one installed?
